Slow Cooked Chicken Fajitas

Have you ever had fajitas? If so, then you know that they’re deliciously fiery with interesting textures of crunchy and soft at the same time. It’s a great entree that the whole family enjoys without making a huge chaos in the kitchen. Actually, fajitas are one of the most popularly purchased entrees or sides in Mexican restaurants. Don’t believe it? Just think about the name and what they consist of! Even the thought of it sounds great already! So we decided to come up with our own version of a Mexican fajita, kosher style!

What You’ll Need:

3lbs chicken breasts

1 green, red, orange, and yellow bell pepper (julienned)

1 medium yellow onion

2 petite diced tomatoes

5 cloves minced garlic

3 tsp chili powder

2 tsp paprika

3 ground cumin

1 tsp pepper

2 tsp salt

1 tsp ground coriander

2 tbsp honey

2 tbsp lime juice

Directions:

In a slow cooker, pour the tomato and evenly distribute it on the base. Top this with a layer of colorful bell peppers and half of the sliced onions. Sprinkle in your dice garlic, and add the chicken.

In a separate bowl, you’re going to mix in all the spices like cumin, chili powder, paprika, salt, pepper, and ground coriander. When you’re finished with this process, evenly douse the mixture to the chicken and sprinkle the remaining on the bottom half of the chicken. Top the remaining tomatoes at the top of the chicken and layer it with more bell peppers and onion.

If you want to cook the fajita faster, put the slow cooker on high for about 4 hours. If you need more time, set it on low for about 8 hours until the vegetables and chicken are tender.

When everything is ready, remove the chicken from the slow cooker. Let it cool for a few minutes, and cut it into strips. Ladle some of the broth, and discard the excess. Whisk together the honey and lime juice. Gently toss the vegetables with the chicken! Serve with tortillas! Easy, right?
